Broccoli Grape Salad
RECIPE
This lovely red and green salad is as attractive as it is delicious. Broccoli, red grapes, sauteed onions and toasted nuts come together in this sweet and tangy side dish. An exceptional addition to any meal.
Serves 4
4 cups broccoli florets, in small pieces
1 cup red grapes, halved
1/2 tablespoon olive oil
1/2 small chopped onions
1/3 cup hazelnuts or pecans
Dressing:
1/2 cup mayonnaise
1 1/2 tablespoon apple cider vinegar
1 tablespoon sugar
black pepper
Preheat the oven to 350º F (175ºC). Place the nuts on a baking sheet in a single layer and toast them for 5 to 6 minutes, watching carefully to make sure they do not burn. (For hazelnuts, after toasting, rub the nuts together in a towel to remove the dark skins).
In a skillet, heat olive oil over medium heat until hot. Saute the onions until translucent, stirring frequently.
Combine the broccoli florets, red grapes, and sauteed onions in a bowl.
Whisk together mayonnaise, apple cider vinegar, sugar and black pepper. Pour over the broccoli salad and toss to coat evenly. Add the toasted nuts and mix just before serving.
