Colourful Scalloped Potatoes

This scalloped potato recipe celebrates the diverse colours and flavours of the much loved, yet humble potato. Red, yellow, blue and white potatoes add colour and nuanced taste to this potato classic. Make with any combination of potato colours and varieties. Topped with cheese, scalloped potatoes are a traditional favourite for special dinners and prepare-ahead entertaining.

Baking time: 1 hour
6 to 8 potatoes of varied colours (red, yellow, blue, white), thinly sliced
1 onion, chopped
1 tbsp olive oil
2 tablespoons flour
2 tablespoons butter
salt
freshly ground black pepper
1 to 1 1/2 cups milk
1/2 cup shredded Cheddar cheese
Sauté chopped onions in olive oil until nearly tender. Set aside.
Thinly slice a mix of yellow, red, blue and white potatoes (or any combination of colourful potatoes). Place a layer of potatoes in a lightly oiled 2-litre (2-quart) shallow baking dish. Sprinkle the potatoes with salt, pepper, onions, a little flour, and dots of butter. Pour just enough milk over the layer to wet the flour. If necessary, take a fork and blend the flour and milk, so you do not have any areas of dry flour.
Add two to three more layers of potatoes, seasonings, flour and butter, ending on a layer of potato. Make sure the final layer has an attractive mix of potato varieties. Season the top layer with salt, pepper and dots of butter. Cover and bake the scalloped potatoes at 375ºF (190ºC) for 45 minutes. Uncover and sprinkle cheese on the top. Return to the oven and bake for 15 more minutes. The dish is done when the cheese is melted and the potatoes are tender.
