Pear Cinnamon Scones

RECIPE

Cinnamon accentuates the sweetness of fresh pears in these healthy whole grain scones. Serve warm for breakfast, brunch or snacks.

1 1/2 cups unbleached flour
1/2 cup whole wheat flour
1/4 cup wheat germ
1/4 cup brown sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
2 1/2 teaspoons cinnamon
1/2 cup cooking oil
1 egg
2/3 cup buttermilk
1 pear, peeled and chopped (about 2/3 cup)

Preheat the oven to 350º F (175º C).

Peel and core a pear, and chop into small pieces. Set aside.

In a large bowl, mix together the unbleached and wheat flours, wheat germ, brown sugar, baking powder, baking soda, salt, and cinnamon.

Add the oil, egg, buttermilk and pear pieces, and mix until just combined.

On a floured surface, shape the dough into a rectangle about 1 inch (2.5 cm) thick. Cut into 12 triangles. Bake on an ungreased baking sheet for 20–25 minutes.
