Cucumber Dill Salad

This salad is like a taste of summer. Cucumber, fresh dill and garlic, the bite of vinaigrette, and a touch of sugar to bring it all together. Definitely one for the family favourites list!

Cucumber Dill Salad

Serves 4

3 cups cucumber, peeled, seeded and sliced
1 tablespoon fresh dill, minced
3 medium garlic cloves, minced
1/4 cup rice vinegar
3 tablespoons light olive oil or other vegetable oil
1/2 teaspoon salt
1 teaspoon sugar

Peel the cucumbers, cut them in half lengthwise and remove the seeds with a small spoon. Slice the seeded cucumbers thinly. Toss the cucumbers with the remaining ingredients in a bowl and serve.

To store, refrigerate in a covered container for up to two days.
